In Spring we focus on Liver health and I have a delicious recipe for Liver with Onions
Ingredients:
Beef Liver- organic and grass-fed
Milk or Kefir – organic and grass-fed
Onions – chopped
Boiled or Mashed Potatoes
Clarified Butter (Ghee)
To remove bitter taste from the Liver, soak it in milk or kefir for about 1- 1.5 hours. Rinse the milk or kefir and pat dry. Cut liver to the desired size. On a pan warm up clarified butter and lightly sautee onions, when onions are soft add liver pieces and lightly cook, don’t over-fry and serve.
I usually eat it with boiled cubed potatoes and steamed dandelion greens. I keep leftovers of the liver for the next day carbohydrate-free snack.
